Stuffed Peppers!

Okay, to be completely honest I have been so excited to make this recipe for months now! There are so many different recipes and things you can make in peppers! You can make it vegetarian, gluten free, spicy, sweet and everything in between! I chose to stuff mine like a taco because that is what I had in stock. Remember, poor starving college student makes due with what she has. 

Stuffed Peppers 
3 large peppers 
1 lb ground turkey
1/2 onion
1/2 packet taco seasoning 
1 c cooked brown rice
1 c beans 
1/4 c diced tomatoes 
1/4 c cheese 

Prep peppers, cutting around the top and cleaning out the inside with a spoon. Next, place all ingredients together in a mixing bowl. With hands, mix thourghally. Stuff each pepper to the brim with mix. Place in a cooking dish and cook at 325 for 30 minutes. When time is up, place cheese over the top and cook for 5-10 minutes until melted. Enjoy!
