DATE NIGHT- Cheesecake Stuffed Chocolate Covered Strawberries

Happy Valentines Day this week! Okay, so who is looking for something creative and fun to do this year for Valentines Day. The restaurants are going to be crowded so without a reservation, that will be tough. The movie theater will be packed since everyone has purchased their tickets at least a week in advanced (like most do am I right 😉 ) And you don't feel like spending $300+ on a romantic Valentine's Day get away because you have work/school on Tuesday, and on Wednesday. Valentine's Day is in the middle of the week this year, so what the heck are you supposed to do?

Well, you have come to the right place, because I have the solution for you! Why not spend a night in this Valentines Day? And I don't mean like the usual night in where you throw together a casserole for dinner and watch tv until someone goes to bed. NO! I mean a romantic night in! Plan the evening, cook a home cooked dinner together, light some candles, rent a movie in advanced, and make my perfect date night Cheesecake Stuffed Chocolate Covered Strawberries! 

I would start by cooking up something nice for dinner. Get out the nice china, buy a bottle of sparkling cider. and set out some candles. I have a great fettuccini recipe you can try  here ---->  Fettuccini Alfredo from Scratch that would go great with a parmesan crusted chicken breast, roasted asparagus, and a great garlic bread from my friends over at The Six Sisters Stuff- Cheesy Pull Apart Garlic . Spend the dinner engaging with one another, talk about your day, ask questions, listen to your significant other, and flirt. Have a wonderful dinner with the one you love the most.

After dinner, I suggest you and your loved one make a batch of my amazing Cheesecake Stuffed Chocolate Dipped Strawberries. Making dessert together is the best kind of date to me! This recipe is very easy and very fun to make!

Cheesecake Stuffed Chocolate Covered Strawberries

24 strawberries
8 ounces cream cheese
1 cup whipping cream
1/2 cup sugar
1 teaspoon vanilla
1 cup chocolate chips
1 teaspoon coconut oil

Start by creaming together cream cheese, whipping cream, sugar, and vanilla. Insert filling into a gallon sized ziplock bag. Remove tip.

Now, prepare the strawberries. Wash them, then remove the stems and the insides using a strawberry huller (link above) or a knife. Once removed, using the self made pastry bag, pipe the cream into the strawberries. Refrigerate while preparing the chocolate.

Add the chocolate chips and coconut oil to a microwave safe dish and cook in 30 second increments, stirring in between, until smooth. Dip each strawberry into the melted chocolate and place on parchment paper and into the refrigerate to set. Eat and enjoy!

P.S. Brandon and I did this exact date last year for Valentines Day and we had a blast!! It was so fun to come together to make the strawberries and get to enjoy them! Play with toppings if you would like, add graham crackers, oreos, sprinkles, or nuts! Go crazy and HAVE FUN!
