Chicken Divan

The best kinds of dinners are those than can be thrown together in a short amount of time and you will know that your family will love it! That is what Chicken Divan has become to my family. One of our family favorite dinners is Chicken Divan! It is so creamy and delicious! It is ready to eat in 30 minutes which makes it that much better! On a crazy day, it is nice to have a go to recipe that you know will be delicious!

A great family friend showed my family this recipe many years ago and we have loved and cherished it ever since! This was my best friend growing up most favorite dinner! Every year for her birthday, she would ask her mom for Chicken Divan and Artichokes and every year I would spend her birthday dinner with her and that was what you could count on! I love it and am so glad that they shared it with me! Thats the beauty of cooking, sharing recipes and memories!

The best part of this recipe is if you make it with the prepackaged Rotisserie Chicken from Costco, it really helps to save time! You can simply throw together the sauce, coat the chicken in it, and put it in a casserole dish to bake! Simply and satisfying! We serve ours over rice or orzo pasta, with a side of peas.

Chicken Divan

1 package Costco Rotisserie Chicken
2 cans Cream of Chicken Soup
1 cup Mayo
1 cup Sour Cream
2 tablespoons Lemon Juice
optional: 1 teaspoon Curry Powder
               1/2 cup cheese

Preheat oven to 350.

Mix together cream of chicken soup, mayo, sour cream, and lemon juice. Add the rotisserie chicken chunks and coat evenly.

Spread into 9x13 pan and cover with tinfoil. Bake for 30 minutes. Top with cheese if desired.

Serve over rice or orzo pasta.
