Hawaiian Haystacks with Instant Pot Coconut Rice

Hawaiian Haystacks are one of my favorite dinner recipes. In my family, we like to get creative with our toppings. We do the traditional coconut flakes, pineapple, and carrots. Then, we like to play around! Hawaiian haystacks are great because everyones gets to build their own plate with their favorite toppings. Dinner is best with variety. We also love ours on top of Coconut Rice! Recently, I have been working to develop how to cook coconut rice in the pressure cooker! Today, I am teaching you how I do it!

This time, we tried our recipe on top of some Coconut Rice in my pressure cooker! I have adapted this recipe from the pressure cooker recipes website! We loved it! The rice had such a great flavor and it really compliments the chicken in the haystacks. I absolutely love my pressure cooker! I am working to master a few new recipes that I can't wait to share with you guys! In the mean time, lets get cooking this Coconut Rice in the Insta Pot!

This recipe is similar to my families favorite Chicken Divan dinner recipe. If you like the Hawaiian Haystacks, you should try this recipe for dinner another night! From my kitchen to yours, let's get cooking! 

Hawaiian Haystacks with Insta Pot Coconut Rice

2 cups chopped rotisserie chicken
2 cups sour cream or greek yogurt 
2 cans of cream of chicken soup
½ cup milk or coconut milk

In sauce pan, add chicken, sour cream, cream of chicken soup and milk. Heat and stir in saucepan over medium heat until mixture is heated evenly throughout. Serve over Coconut Rice and top with desired toppings. 

Topping Ideas

shredded cheese
chow mien noodles
pineapple chunks
green onions
water chestnuts

Insta Pot Coconut Rice

2 cups basmati rice
1 cup unsweetened coconut milk
1 1/4 cup chicken broth
1/4 teaspoon sea salt

Place rice, coconut milk, chicken broth, and salt in Insta Pot. Mix well. Manually cook on high pressure for 8-10 minutes. Then, manually release the pressure for 10 minutes.
