Summertime Vegetable Kabobs




One of the best things about summer is grilling out on the barbecue! There is nothing like a warm summer night, a hot grill, with steaks and vegetables and fruit salad ready to be eaten! My family loves gathering outside on the deck for dinner and Brandon and I often head down to the patios at our apartment building to use the community grills. Everything that comes off of the grill tastes amazing. It is a little charred, juicy, and has an amazing flavor! Today I am sharing with you my favorite Summertime Vegetable Kabobs!





Kabobs are so much fun because they are finger foods! People love finger food, I know that I do! They also make the vegetables look so pretty and presentable, even kids will want to try them! As you can see, I like to keep my kabobs protein free! When it comes to grilling, I enjoy a large, juicy piece of steak or chicken that I can cut into myself over little bits of pre-chopped meats. You certainly can add a piece of chicken to your kabobs if you would like, just be sure to cook it thoroughly. Maybe cook the chicken first, then cube it and add the the skewers and char it on the grill! You would not want a piece of raw meat on there! Even cooking times work best when everything on the skewers cook at the same speed!



As you can see here, our little favorite dinner is a steak prepared on the grill, topped with a little grilled shrimp action to make it a surf and turf! A baked potato, a vegetable skewer, and a delicious side salad! This salad is a Summer Strawberry and Poppyseed Salad that I will be sharing the recipe to soon! You can serve these kabobs however you want! Just look how pretty they look and how much they add to your plate! Not to mention how delicious they taste! That's enough talking, lets get cooking!! 






Springtime Vegetable Kabobs

20 long skewer rods 
3 large zucchini 
3 large yellow squash 
1 cup whole mushrooms
3 red bell peppers, chopped into cubes 
Olive Oil
Salt and Pepper

First, we start with vegetable prep. Using either a Mandoline Slicer or an 
Cuisinart Food Processor with slicing attachment, slice zucchini and squash into 1/8 inch round disks! It is important to have them all the same size, so that they will cook up evenly.

The bell peppers, I just removed the seeds and cut them into 1 inch cubes.

The mushrooms can just be sliced into 1/8 inch thick slices.

Stack all the vegetables on the skewers in any pattern you would like. Brush the skewers with olive oil and season with salt and pepper.

Place directly on medium heat grill and allow them to cook, about 2-4 minutes on each side. Enjoy!
