Spinach Salad with Sweet Chia Seed Dressing

This salad tastes even better than it looks. So fun and pretty with bright colors and a nutty crunch! A delicious combination of berries, apples, toasted almonds, seeds and cheese topped with a sweet chia seed dressing makes this the perfect salad for any occasion. It has become my go to salad when I take something to parties and events, and it always gets raving reviews and complements! The chia seed dressing is so sweet with such a unique flavor, that creates a healthier option that it is absolutely divine!

The Sweet Chia Seed Dressing is one of my new favorite dressings because it has such a great flavor! I used Chia Seeds in this dressing recipe for a little different texture as well as the many health benefits that they have. Chia seeds are a good source of fiber, antioxidants, Omega 3 fatty acids, and they are gluten free! If you allow this dressing to sit anywhere from an hour to overnight, the chia seeds will expand and soften and have a more pleasing texture. This dressing has quickly become a crowd favorite, and I will be using it often for other salad recipes!

This recipe was one I developed for a collaboration and it has become one of my favorite go-to recipes! Spinach Salad with Sweet Chia Seed Dressing
Serves up to 10

1 large package spinach
1 cup sliced strawberries
1 16 ounce container raspberries
1 16 ounce container blueberries
1 honey-crisp apple, cubed
1 cup pumpkin seeds
1 cup slivered almonds, toasted
1/2 cup parmesan cheese

Sweet Chia Seed Dressing

2 cups sugar
2 teaspoons kosher salt
2 teaspoons dry mustard
1 small onion
1 cup red wine vinegar
1 1/2 cup canola oil
2 teaspoons chia seeds

For the dressing: Dice one small onion, I typically use white.

Next, add sugar, salt, dry mustard, onion, red wine vinegar, and canola oil into a blender. Pulse until smooth.

Then, mix in the chia seeds and allow to sit for at least 10 minutes to overnight before serving to allow them to soak and soften.

For the salad: preheat oven to 400. Place sliced almonds on a cookie sheet and bake for 5 minutes, allowing the nuts to brown.

Add all of the spinach into a large bowl.

Top the salad with strawberries, raspberries, blueberries, apples, pumpkin seeds, toasted almonds, and cheese.

Pour the Sweet Chia Seed Dressing over the salad and serve.
