Tea Party Ribbon Sandwiches





Ribbon sandwiches are a timeless, classic sandwich favorite that are just as pretty as they are delicious! The brightly colored bread, delicious filling, and combination of flavors make these little sandwiches so memorable. I have developed two flavor combinations that I love! One flavor combination is Chicken Salad & Cucumber and the other is Ham & Egg.




This recipe was one I developed for a collaboration and it has become one of my favorite go-to recipes! Early in July, I collaborate with Lyndsie, Alanna, and Natalie over at Two Sisters and a Story to create the perfect Tea Party! From fresh picked flowers, to gorgeous china dishes, delicious finger food, and wonderful company, this tea party was fit for a queen! I had so much fun putting together the Tea Party Menu. The theme for this Tea Party was no bake recipes and finger food. Each recipe is unique and delicious; we all loved them! You can make ribbon sandwiches your own by using any color combination of bread and switching up the fillings in the layers! I ordered my colored bread from my local marketplace, Dick's Market Bakery. There, they sliced the loaves for me into ribbon sandwich cuts, making it easy for me build each layer evenly. I ordered 1 loaf of pink, 1 loaf of yellow, and one loaf of white and that was plenty to build these sandwiches. I had a ton left over for 4 people so keep that in mind when planning for your party and number of guests!




Chicken Salad & Cucumber Ribbon Sandwiches

1 loaf pink colored white bread
1 loaf yellow colored white bread
1 loaf traditional white bread

Chicken Salad Layer:
2 cans chicken
2 cups Best Foods mayo
2 teaspoons fresh tarragon
1/2 cup dried cherries
1/2 cup diced celery
1 lemon, juiced
Salt & Pepper

Mix together chicken, mayo, tarragon, and lemon juice until incorporated. Then, fold in the celery, dried cherries. Season with salt and pepper to taste.

Cucumber Layer:
1 cucumber, peeled & thinly sliced
1 8 ounce package cream cheese
1/4 cup Best Foods mayo
1 dash Worcestershire sauce
1/2 teaspoon Hidden Valley Ranch Seasoning


Peel and thinly slice cucumber. Place between two paper towels to dry the cucumbers out completely. Prepare filling by mixing cream cheese, mayo, Worcestershire sauce, and ranch seasoning in an electric mixer. Beat until smooth.

Assembly:
Place the bottom layer of pink bread down. Spread a layer of the cream cheese mixture on top of pink bread. Top with cucumber slices. Next, place white bread layer. Then, spread a layer of the chicken salad mix on top of the white bread. Top it off with the yellow layer, cut, and serve.


Ham & Egg Salad Ribbon Sandwiches 

1 loaf pink colored white bread
1 loaf yellow colored white bread
1 loaf traditional white bread

Ham Layer:
2 8 ounce containers canned ham
1 1/2 cups Best Foods mayo
Salt & Pepper

Mix ham, mayo, and salt & pepper together in a bowl.

Egg Salad Layer:
6 hard boiled eggs
1 cup water
2 cups Best Foods mayo
1 teaspoon mustard
Salt & Pepper

In an Instant Pot, place the rack attachment in the bottom. Fill with 1 cup water and 6 eggs. Seal and manually set time to 5 minutes. It will take approximately 5 minutes to get to pressure, 5 minutes to cook, then let the pressure naturally release for an additional 5 minutes. When finished, transfer eggs to an ice bath to stop the cooking process.

Peel eggs and place in a mixing bowl, breaking them up into smaller pieces with a fork. Add mayo, mustard, and salt and pepper and mix until smooth.

Assembly:
Place one yellow slice of bread down. Spread a layer of the egg salad mixture onto the bread. Top with a white bread layer. Then, spread the ham mixture over the white bread and top with the pink layer of bread. Cut, and serve!
