Cream of Broccoli Soup



One of my fall favorite recipes is this Cream of Broccoli soup! Cream of Broccoli is my all time favorite soup because it is so creamy, flavorful, and delicious! What is your favorite soup recipe? Soup is always a great option for an easy dinner, a recipe to take to a friend, or to make in bulk and freeze for later! This soup is great because it is creamy, it also contains a full serving of veggies, and it is simple to throw together. Fall recipes are in full swing around here! Serve up this Cream of Broccoli soup in a delicious bread bowl or with a side of hot rolls and you will be in heaven!! Have you tried my new Pumpkin Spice Donut Holes? They are so easy and so delicious! You'll want to double this recipe because eating one just doesn't cut it! 






Cream of Broccoli Soup 
Serves 6-8

2 T butter
3/4 cup chopping onion
6 cups water
5 cups fresh broccoli
1 quart half and half
1 8 ounce can chicken broth
1 cup Real California Cheese- cheddar!

In a dutch oven on the stove, heat butter. Then, add the chopping conion and saute over medium heat for 3 minutes. Add water and chicken broth. Heat mixture to a rolling boil, stirring occasionally. In a microwave safe bowl, steam the broccoli, 1/2 cup of water into the broccoli and microwave on high for 4 minutes. Add broccoli to soup mixture. Add half ad half and cheese. If needed, thicken with corn starch and water or my favorite tip, add mash potatoes if you have some on hand or instant potatoes. Enjoy!
