Protein Energy Bites

Protein Balls, Protein Bites, Energy Balls, Oat Balls, Energy Bites whatever you want to call them. It's all the same delicious snack. And the best part? They are actually a healthy treat for you. With the New Year and everyone's motivation to get in shape, I thought it would be nice to give everyone a nice sweet treat option that won't complete break the diet!

Typically, you should use dark chocolate to keep the sugar content down, but I can't swallow dark chocolate. I think it is the satan of the chocolates. I have to splurge a little when I make this recipe by adding milk chocolate chips.

This recipe is made with whole ingredients that add nutritional value to the snack rather than just empty calories. I made these with honey today, but you can also make it with Agave which is also a natural sweetener. The coconut flakes are also adding a natural sweet flavor while adding texture. This recipe is great for the chocolate and the peanut butter fans!  If you are not familiar with flax seeds, here is a link to try out my favorite brand! Protein Energy Bites Recipe
Makes about 12 1 inch bites

1/2 c peanut butter
1 c oatmeal
1/2 c flax seed
1/2 c coconut flakes
1/3 c honey
1 tsp vanilla extract
1/2 c chocolate chips (or more)

Combine first the peanut butter, oatmeal and flaxseeds. Next, add the coconut flakes, honey and vanilla. Mix well. Finally, add the chocolate chips. Mix well, it may take using your hands. Form into 1 inch balls and place on parchment paper to set. Refrigerate for 10 minutes or refrigerate/freeze until ready to eat.
