MEAL PREP: Spaghetti Squash, Chicken, and Cauliflower Alfredo Bowls

This week,  I wanted to make something a little different than the usual for our bowls. I didn't want to use rice again. 
Squash noodles are so great! They help to shake up the typical bowl routine of rice chicken and veggies without adding extra calories! Brandon and I love them! They are super easy to prepare and I will give instructions later in the post! The sauce for these bowls is my Creamy Cauliflower Alfredo Sauce! It is perfect for this bowl giving the noodles the sauce and flavor that they need, without adding calories, fat, or processed ingredients! These bowls are lite, healthy, delicious and keep you fueled for your day! 

Squash noodles are easier to prepare than you would think! They are time consuming, so do plan ahead! The best part is, they don't have much flavor, meaning you can dress them up however you would like! They are a great alternative to traditional noodles. Cooking the Squash Noodles 
1 medium sized round yellow squash 
Olive oil 
Salt and pepper 

Start by preheating the oven to 375. Next, slice the squash into 2 inch thick disks. Place the disks on a cookie sheet and drizzle olive oil over them. Season with salt and pepper. Bake in oven for 50 minutes, or until noodles get soft. When finished, taking two forks, pull the squash away from the rim , this will create long, spaghetti like noodles. 

Lately I have started to buy the precooked rotisserie chicken from Costco and it has saved me! I hate making chicken more than anything and this way, I don't have to! The chicken is ready to go, cooked and sliced I just have to add it to whatever I am making. It is $8 and you can usually find it in the freezer section or right next to the whole rotisserie chickens! You will thank me later!! 

MEAL PREP: Spaghetti Squash Bowls 

1 medium Squash 
1 package Costco precooked rotisserie chicken (this stuff is the best!!)
2 broccoli crowns 
1 bunch asparagus 
Olive oil 
Salt and pepper 

Prepare Squash noodles. Prep broccoli by steaming and asparagus in the frying pan. The Costco rotisserie chicken is already cooked, it may just need warmed in the microwave. Prepare Creamy Cauliflower Alfredo sauce as directed. Mix everything together in a large bowl and serve for dinner, or section off into meal prep bowls for the week. 

This recipe is best with the Creamy Cauliflower Alfredo Sauce! It enhances the flavor of the bowls without adding calories!
