Even Stevens Blue(berry) Steel Salad Copycat

Have you ever eaten at Even Steven? It is the best hidden gem of a sandwich place and everything tastes amazing! My favorite thing to order is the Half Sandwich Half Salad combination with a Sprang Chicken Sandwich and the Blue(berry) Steel Salad. This salad is so so so good! Its so different than any other salad I've had and I think that is why I love it! It is made with a spring mix, blueberries, feta cheese, homemade granola and a blueberry dressing.  The homemade granola is what makes this salad delicious! I love this salad it much that I went home and recreated the recipe myself! 

Even Stevens is so awesome. Its a relatively new place to eat and you can't go wrong here! They are located all over Utah, one is located right next to my place in Sugarhouse, and they always are the cutest restaurants! Often times, they promote live music in their restaurants and have a very cool vibe. They serve breakfast, lunch and dinner. They are "a sandwich shop with a cause" because the are constantly donating to different charities and organizations and helping to make a difference in the world. The menu is very diverse giving you a lot of choices and you cannot go wrong! If you haven't been, go find a location near you and you'll thank me later!

The best part about this salad is that it is topped with a delicious homemade granola. I am a huge granola fan! The first time I had this salad I thought to myself, "man this tastes a lot like my granola recipe." They are both very chewy, cinnamon flavory and delicious. I do not have Even Steven's recipe but I feel that my recipe is very similar and compliments the flavor perfectly. The chunks of granola almost taste like croutons, they have a similar effect, with a burst of cinnamon flavor. When making this salad, use my Homemade Granola recipe and it'll be amazing!

The simplicity of this salad makes it so unique. There really isn't much to it, but each flavor is so powerful and so wonderful that it makes an impact. I am bringing you the closest recipe I can get to the real thing! It is awesome! This is the salad that I chose to take to my Easter party this weekend and it got the highest praise. Along with my Personal Easter Cheesecake Cupcakes, this Easter menu was one for the books!

I highly recommend using a Blendtec for this recipe! For a dressing, you want it smooth with absolutely no chunks. My Blendtec always guarantees a chunk free blend and I love it! Even Stevens Blue(berry) Steel Salad Copycat

1 cup frozen blueberries (frozen mixed berry works as well)
1/2 cup fresh squeezed lemon juice
1/4 cup olive oil
1 tablespoon honey or agave
1 tablespoon chia seeds

1 box fresh spring mix 
2 cups fresh blueberries
2 cups feta cheese

Add frozen blueberries, lemon juice, olive oil, and honey/agave into Blendtec. Blend on medium speed until smoothed. Stir in chia seeds.

Toss spring mix with fresh blueberries, feta, and homemade granola. Mix with salad dressing. Top with extra blueberries, feta, and homemade granola.
